Before any grain enters our kitchen, it is thoroughly cleaned. Dust, stones, husks, and other impurities are gently removed using sieves and air blowers. The cleaning process is not mechanical—it’s done with attention and love, ensuring that every grain is treated with respect.
After sorting, the grains are washed multiple times until they are sparkling clean. We believe that cleanliness is the first step toward health, and we treat this process as an offering to those who will consume it.
The cleaned rice and dal are soaked in pure, filtered water for hours, allowing them to soften and awaken. Rice is soaked for about 4–6 hours, while urad dal, along with fenugreek seeds, is soaked for 2–4 hours.
This stage is a quiet, nurturing pause—letting the ingredients transform, preparing them to blend together harmoniously. The water is chosen with care, ensuring it is free from impurities so that the natural flavors remain intact.
Once soaked, the grains are gently drained and ground using stainless steel or stone grinders, depending on batch size. Rice is ground to a slightly coarse texture, while urad dal is ground into a smooth, fluffy paste.
Water is added little by little—not too much, not too little—so that the batter achieves a velvety and spreadable consistency. Grinding is not rushed; it’s done thoughtfully, preserving the natural aroma and texture that will make every idly soft and every dosa crisp.
The two batters are carefully mixed together in large food-safe vessels, ensuring every portion is consistent. Salt is added as required, and the batter is whisked with gentle yet thorough strokes, as if preparing a meal for loved ones.

The mixed batter is allowed to rest and ferment in clean containers, covered but breathable, at a temperature of 30°C – 35°C. This natural process is where the magic happens—bubbles form, flavors deepen, and the batter rises.

Before packing, every batch is carefully tested for consistency, taste, pH level, and texture. We ensure that there are no off-flavors or contamination.
